Chocolate Stout Float

June 20, 2012 2 Comments

chocolate stout float

I am extremely excited to share my recipe with you this week, for several reasons.  First, I love floats.  Second, I made a float using two of my favorite things – beer and chocolate.  Cream milk stout poured over a scoop of chocolate stout sorbet rimmed with chocolate beer sauce.  Oh yes.  And third, I get to share my first Scoop Adventures Video!

Stout is one of my favorite beer styles, with its creamy body and hints of coffee and chocolate.  I have used dark flavorful beers in my cooking, baking, and ice cream making before, but this time it was special because I used my hubs’ very own homebrew.  His stout has a great balance of malt flavors and just the right amount of hops that do not overpower the sorbet.  Other great brews I would recommend to make this float are Left Hand Milk Stout, Dogfish Head Chicory Stout, or Rouge Chocolate Stout.

Watch the video (recipe below) and check out how to make your very own Chocolate Beer Float!  Enjoy!

Chocolate Stout Float

To make this float, first prepare the Chocolate Stout Sorbet by following my recipe for Chocolate Porter Sorbet and substitute stout for porter.  For a creamier scoop, try my Dark Chocolate Stout Ice Cream.  The beers I use in these recipes are between 5.5% and 6.5% ABV.  Try to stay in this range to avoid a sorbet or ice cream that is too soft.

To make chocolate beer sauce:

Roughly chop a small bar of dark chocolate (1.65 ounces) and melt chocolate using a double boiler.  Once chocolate is melted.  Add about 2 Tablespoons heavy cream; stir until combined.  Add about 1/4 cup stout; stir to combine.  Remove from heat, pour into a wide bowl and let cool slightly.

To make float:

Dip top of pint glasses into chocolate, twisting glass slightly to coat.  Drizzle extra sauce in bottom of glasses for extra chocolate flavor.  Add one to two scoops of Chocolate Stout Sorbet to each pint glass.  Fill glass with 8 to 10 ounces of your favorite stout.  Shave chocolate on top of each float. Add a straw and enjoy!

Looks absolutely delicious, I wonder how such a thing would turn out using Southern Tier Chocolat Stout (basically Hershey syrup that will get you really drunk….at 11% abv)…..

Timothy – The float would be delicious with Southern Tier’s stout, however if you use it to make the sorbet I would add about half the stout and add more water. The high ABV may make the sorbet too soft. Good luck!
